Chocolate Eclairs

Recipe for Chocolate Eclairs – My family loves these eclairs and request them all the time. I usually make them as dessert whenever we have company coming, they are always a hit!

Chocolate Eclairs

Ingredients

  • 1/2 cup butter
  • 1 cup water
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 4 eggs
  • 1 (5 ounce) package instant vanilla pudding mix
  • 2 1/2 cups cold milk
  • 1 cup heavy cream
  • 1/4 cup confectioners' sugar
  • 1 teaspoon vanilla extract
  • 2 (1 ounce) squares semisweet chocolate
  • 2 tablespoons butter
  • 1 cup confectioners' sugar
  • 1 teaspoon vanilla extract
  • 3 tablespoons hot water

Instructions

  1. Preheat oven to 450 degrees F (230 degrees C). Grease a cookie sheet.
  2. In a medium saucepan, combine 1/2 cup butter and 1 cup water. Bring to a boil, stirring until butter melts completely. Reduce heat to low, and add flour and salt. Stir vigorously until mixture leaves the sides of the pan and begins to form a stiff ball. Remove from heat. Add eggs, one at a time, beating well to incorporate completely after each addition. With a spoon or a pastry bag fitted with a No. 10, or larger, tip, spoon or pipe dough onto cookie sheet in 1 1/2 x 4 inch strips.
  3. Bake 15 minutes in the preheated oven, then reduce heat to 325 degrees F (165 degrees C) and bake 20 minutes more, until hollow sounding when lightly tapped on the bottom. Cool completely on a wire rack.
  4. For the filling, combine pudding mix and milk in medium bowl according to package directions. In a separate bowl, beat the cream with an electric mixer until soft peaks form. Beat in 1/4 cup confectioners' sugar and 1 teaspoon vanilla. Fold whipped cream into pudding. Cut tops off of cooled pastry shells with a sharp knife. Fill shells with pudding mixture and replace tops.
  5. For the icing, melt the chocolate and 2 tablespoons butter in a medium saucepan over low heat. Stir in 1 cup confectioners' sugar and 1 teaspoon vanilla. Stir in hot water, one tablespoon at a time, until icing is smooth and has reached desired consistency. Remove from heat, cool slightly, and drizzle over filled eclairs. Refrigerate until serving.

Chocolate Wacky Cake

 

It is said that the original recipe for “Chocolate Wacky Cake” surfaced during WWII, when certain supplies and ingredients were in short supply.   Why is it called “Wacky Cake?”  Because of the way it is mixed together.

Chocolate Wacky Cake

Ingredients

  • 1 1/2 cups flour
  • 1/2 teaspoon salt
  • 3 rounded tablespoons cocoa
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1 tablespoon vinegar.
  • 5 tablespoons melted shortening (e.g. butter)
  • 1 teaspoon vanilla

Instructions

  1. In a baking dish (~ 9×13 inch ), whisk together first 5 ingredients.
  2. Make three wells in the dry ingredients.
  3. In one well add 1 tablespoon vinegar.
  4. To the second well add 5 tablespoons melted shortening (e.g. butter).
  5. To the third well add 1 teaspoon vanilla (add more if you like).
  6. Then pour 1 cup of cold water over the entire dish and stir until well mixed. (Note: some folks have reported that they’ve substituted milk for the water)
  7. Bake in the same dish in a 350 degree oven for 20 – 30 minutes or until toothpick comes out clean. Note: While the original recipe states a 30-minute baking time, use your judgement according your oven (it could end up taking only 20 minutes).
  8. Cool the cake before topping with your favorite chocolate glaze/frosting, etc.

As wacky as it sounds … this super-simple recipe yields a moist, not-too-sweet chocolate cake. However, if you have a real sweet tooth, you may want to add your favorite chocolate glaze or frosting on top.

Recipe for Kalamazoo Sliders - Who can say "No" to a burger with that much cheese running off of it?

Football. Parking Lots. Grilled food. Three unmistakable signs that a new season is here – tailgate season. And what better way to tailgate than with these Kalamazoo Sliders? Who could ever say no to these babies?!

But things are changing. More people are tailgating at home. Those changes are being driven by economics, a desire to be with more friends and to extend the game day party.

Season ticket sales for professional sports have dropped more than 47 percent since 2005, according to a study from Tailgater Magazine. The research also found that in the last 10 years, the average ticket price for a professional football game has risen more than 50 percent and parking fees have doubled.

“We’re seeing that homeowners want to bring everyone over for the game, rather than go anywhere,” said Matt Hillebrand, principal of Don’s Appliances in Pittsburgh.

It’s a trend some are calling “homegating.”

Kick off with the grill
Food makes or breaks a homegate. Get the grill off the sidelines. So many times the grill is in a corner, but that takes the host out of the game.

“Keep the grill close to the action,” said Russ Faulk, grillmaster for Kalamazoo Outdoor Gourmet. “That way, the cook can talk with guests during the game.”

As for the menu, Faulk recommends individual-sized appetizers – like sliders and mini tacos.

Mix it up at halftime
Fire pits, smokers and pizza ovens make the party more interactive for guests, Hillebrand said.

Pizza ovens get your guests involved in the cooking, Faulk said. Some companies, such as Kalamazoo Outdoor Gourmet, offer countertop versions.

When the weather gets cooler, fire pits offer a place to warm up while watching the game outdoors. They also create opportunities for more activities, like making s’mores.

Headed to overtime
Let’s not forget the reason for the homegate: the game.

Kalamazoo Sliders

Ingredients

  • 1 red onion
  • extra virgin olive oil
  • fine sea salt
  • 4 pretzel rolls, about 3 inches in diameter
  • 1 pound (15 percent lean) ground beef
  • 4 ounces Cambozola cheese, cut into chunks
  • 4 cocktail skewers

Instructions

  1. Prepare the grill for direct grilling over high heat, about 700 F grill grate temperature.
  2. Slice red onion into 3/4-inch thick slices. Oil both sides and season with salt. Reserve.
  3. Slice pretzel rolls. On dessert plate, pour oil and dip cut sides of each roll to coat evenly. Season oiled side with salt. Reserve.
  4. Form ground beef into patties 1-inch larger in diameter than rolls and about 3/4-inch thick. Recess center of patties so when burgers plump, they will turn out flat.
  5. Brush each patty on all sides with olive oil and season with salt.
  6. Grill onion slices until translucent and soft, about 10 minutes. Remove from grill, break slices down into rings and reserve.
  7. Grill beef patties, turning once, 3-4 minutes per side. Flip patties, adding large ring of onion to each patty. Add small ring or two of onion inside larger ring. Add cheese on top of onion.
  8. While cheese is melting and bottom of patties are cooking, lightly grill rolls.
  9. Gently remove burgers when done and transfer directly onto pretzel rolls. Skewer each burger.

This rich and creamy recipe gives ordinary chicken alfredo a healthy twist, combining fat-free half and half with canned cream of chicken soup and whole-wheat rotini noodles.

Chicken Alfredo With a Twist

Ingredients

  • 2 1/2 cups Rotini pasta, whole-wheat, dry (10 oz)
  • 2 cans Low-fat reduced-sodium cream of chicken soup (Two 10 3/4-oz cans)
  • 1 1/3 cups Fat-free half and half
  • 1/4 teaspoon ground white pepper
  • 1/8 teaspoon garlic powder
  • 1/3 cup grated Parmesan cheese
  • 3 cups Cooked diced chicken, 1/2" pieces (12 oz)

Instructions

  1. In a large pot, bring 2 quarts water to a boil. Gradually stir in pasta and return to a boil. Cook uncovered about 8-10 minutes or until tender. Do not overcook. Drain well.
  2. Mix soup, half-and-half, pepper, garlic powder, parmesan cheese, and chicken in a large pot. Cook for 5 minutes over medium heat, stirring often. Heat to 165 °F or higher for at least 15 seconds.
  3. Combine noodles and sauce right before serving. Serve hot.

  • 1/2 red bell pepper (chopped)
  • 1 1/2 cups shredded Savoy or Napa cabbage
  • 2 medium carrots (grated)
  • 1/3 cup fat-free cream cheese
  • 3 tablespoons natural creamy peanut butter (unsalted)
  • 2 teaspoons low-sodium soy sauce
  • 4 whole-wheat tortillas (8")

Instructions

  1. Cut mangos, vegetables, and chicken. Place in a mixing bowl and toss until well mixed.
  2. In a small mixing bowl, whisk together cream cheese, peanut butter, and soy sauce.
  3. To assemble: lay out tortillas on a flat surface. On each tortilla, spread 1/4 of cream cheese mixture and top with mango, vegetable, and chicken mix. Roll up tightly, tucking in ends of tortilla. Secure with toothpicks.
  4. To serve, cut each wrap in half.
  5. If not serving immediately, refrigerate; keeps well overnight.

Rocky Road Pie

Ingredients

  • 2 cups Walkers Chocolate Chip Shortbread cookie crumbs
  • 2 tablespoons sugar
  • Pinch salt, plus 1/4 teaspoon
  • 2 tablespoons unsalted butter, melted, plus 1 tablespoon cut into pieces and softened
  • 2 ounces semisweet chocolate, chopped
  • 2 ounces unsweetened chocolate, chopped
  • 2 large egg yolks
  • 1/2 cup sugar
  • 2 tablespoons cornstarch
  • 1 3/4 cups whole milk
  • 1 teaspoon vanilla extract, divided
  • 3/4 cup miniature marshmallows
  • 1 cup heavy cream
  • 2 tablespoons confectioners sugar
  • 1/3 cup toasted, chopped walnuts
  • 1 1/2 brownie squares, diced into small pieces
  • Chocolate curls for garnish, optional

Instructions

  1. Preheat oven to 350 degrees F. Lightly grease a 9" pie pan and set aside.
  2. In a medium bowl, combine the cookie crumbs, 2 tablespoons of sugar, a pinch of salt and the melted butter. Pour the crumb mixture into the prepared pie pan and press the mixture evenly into the bottom and up the sides of the pan.
  3. Bake the crust for 15 minutes, or until golden brown. Allow crust to cool completely.
  4. Place the chopped chocolates in the top of a double-boiler, or in a metal bowl set over a pot of barely simmering water, stirring until melted and smooth. Remove from the heat.
  5. Beat the egg yolks in a small bowl.
  6. Combine the sugar, cornstarch and 1/4 teaspoon salt in a medium saucepan over medium heat. Slowly add the milk in a steady stream, whisky constantly. Bring the mixture to a boil, whisking constantly to keep lumps from forming. Remove from the heat.
  7. Slowly add 1/2 cup of the hot milk mixture to the yolks and whisk until smooth. Add the beaten yolk mixture to the remaining hot milk mixture and bring to a simmer over medium-low heat. Simmer, whisking constantly, until thick and smooth, about 3 minutes. Remove from the heat. Place a fine wire-meshed strainer over the bowl with the melted chocolate and pour the pudding mixture into the strainer. Strain the pudding into the chocolate. Add the diced butter and 1/2 teaspoon of the vanilla to the chocolate and pudding mixture and whisk until smooth. Add the marshmallows and stir to combine. Place a piece of plastic wrap directly on the surface of the pudding to prevent a skin from forming. Refrigerate until pudding is set and completely chilled.
  8. Place cream in the bowl of an electric mixer and whisk until soft peaks form. With the machine running, add the confectioners' sugar and remaining 1/2 teaspoon of vanilla. Continue whisking until stiff peaks form.
  9. Fold 1/4 cup of the whipped cream into the chilled pudding. Fold in the walnuts and diced brownies.
  10. Pour pudding filling into the pie crust and chill 30 minutes, or until ready to serve. Just before serving, top the pie with the remaining whipped cream sprinkle with chocolate curls, if desired.

  • 3 cups hot cooked brown rice
  • 3 tablespoons low-sodium soy sauce
  • 1/4 cup water
  • 1 tablespoon honey
  • 1 tablespoon cornstarch
  • 1 1/2 tablespoons canola or corn oil
  • 16 ounces boneless chicken breast (cut into 1-inch cubes)
  • 2 cloves garlic (minced)
  • 1 small white onion, cut into small wedges (about 1/8 inch thick)
  • 3 medium carrots, peeled and thinly sliced (1 cup total)
  • 1 1/2 cups small broccoli florets
  • 1 medium red bell pepper (cut into 1 -inch pieces)

Instructions

  1. Mix soy sauce, water, honey, and cornstarch in a small bowl; set aside.
  2. Heat oil in a wok or large skillet. Add minced garlic; sauté about 1 minutes until garlic is golden.
  3. Add chicken; cook about 5-6 minutes, then push chicken to the side.
  4. Add onions to center of skillet; cook until slightly tender and push to the side.
  5. Continue with carrots, broccoli, and peppers separately, placing each in center of pan, cooking until slightly tender and pushing to the side.
  6. Pour soy sauce mixture into center of skillet. Leaving other ingredients and at the sides of the pan, stir sauce until it thickens.
  7. Mix in with vegetables and chicken. Serve immediately over cooked brown rice.

Ingredients

  • 1 tablespoon olive oil
  • 1 cup Onions, raw, chopped
  • 1 cup Peppers, green bell, chopped
  • 1 cup celery, raw, chopped
  • 1 tablespoon garlic powder
  • 2 teaspoons cumin, ground
  • 1 tablespoon chili powder
  • 1 tablespoon Oregano leaves, dried, ground
  • 2 cups Zucchini, raw, sliced
  • 3 cups Chicken breast, cooked, diced
  • 15 ounces Black beans, canned, drained
  • 30 ounces Kidney beans, red mature, drained
  • 2 cups tomato sauce
  • 30 ounces Diced tomatoes and juice
  • 2 cups chicken broth

Instructions

  1. Heat olive oil in large saucepan or stock pot. Add onions, celery and peppers and cook approximately 5 minutes or until soft.
  2. Add garlic, cumin, oregano, and chili powder.
  3. Add zucchini, chicken broth, diced tomatoes and tomato sauce.
  4. Cook for approximately 15 minutes on medium to high heat, until zucchini is softened.
  5. Add chicken and beans, cook another 20 minutes. Ensure that temperature reaches 165 degrees F.
  6. Serving suggestions: Serve chili with brown rice or quinoa. Chili can be topped with shredded low fat cheddar cheese or fresh cilantro leaves.

This recipe is a perfect way to use leftover chicken. With just 15 minutes of prep time, this recipe will be ready in a snap. No leftovers? Use the quick tip below for poaching boneless, skinless chicken breasts. You can also use store-bought rotisserie chicken. If you do, keep in mind that it’s already salty and omit the salt in the dressing.

Chicken Waldorf Salad

Ingredients

  • 1/3 cup low-fat mayonnaise
  • 1/3 cup nonfat or low-fat plain yogurt
  • 2 teaspoons lemon juice
  • 1/4 teaspoon salt
  • 3 cups chopped cooked chicken breast
  • 1 medium red apple, diced
  • 1 cup halved red or green grapes
  • 1 cup sliced celery
  • 1/2 cup chopped walnuts, divided (toasted if desired)

Instructions

  1. Whisk mayonnaise, yogurt, lemon juice and salt in a large bowl.
  2. Add chicken, apple, grapes, celery and half of the walnuts. Stir to coat well.
  3. Serve topped with the remaining walnuts.

Notes

If you want cooked chicken in a hurry, the easiest way to cook it is to poach it (one pound of raw boneless, skinless chicken breasts yields about 2½ cups chopped or shredded cooked chicken).

  • Place boneless, skinless chicken breasts in a skillet or saucepan.
  • Add lightly salted water (or chicken broth) to cover and bring to a boil.
  • Cover, reduce heat to low, and simmer gently until the chicken is cooked through and no longer pink in the middle (approx 10-15 minutes).

Ingredients

    For the sauce:
  • 1 large, ripe tomato (cored, seeded, and finely chopped, about 1/2 cup)
  • 1/4 small red onion (finely chopped, about 1/4 cup)
  • 2 tablespoons fresh parsley (finely chopped)
  • 2 teaspoons extra virgin olive oil
  • 2 teaspoons red wine vinegar
  • 1/2 teaspoon minced garlic
  • 1/4 teaspoon oregano leaf
  • 1/8 teaspoon low-sodium adobo seasoning
  • 1/8 teaspoon crushed red pepper
  • For the steak:
  • 1 pound skirt steak
  • 1/8 teaspoon low-sodium adobo seasoning

Instructions

    For the sauce:
  1. In a small bowl, mix together tomato, onions, parsley, olive oil, vinegar, garlic, oregano, low-sodium adobo seasoning and crushed red pepper.
  2. Cover and refrigerate for at least 1 hour or up until 48 hours.
  3. For the steak:
  4. Heat grill to medium-high heat. Sprinkle steak on both sides with low-sodium adobo seasoning. Place steak on hot, greased grill grates.
  5. Cook, flipping once, until steak is well browned on both sides and cooked to 145 °F (about 6 minutes for medium-rare).
  6. Let rest for 5 minutes. Thinly slice steak.
  7. Divide steak evenly among serving plates. Top with reserved Salsa Criolla

Notes

Serving Suggestions: Pair with Arepas, cornmeal patties popular in Columbia and Venezuela, and a healthy Quinoa Salad for a South American Steak Supper.

  • 3 carrots (large, chopped)
  • 3 celery stalks (chopped)
  • 1/2 tablespoon garlic (finely chopped)
  • 2 tablespoons vegetable oil
  • 2 cans low-sodium hominy (about 30 ounces)
  • 1 can canned chicken (about 12 ounces)
  • 4 cups water
  • 1 teaspoon cayenne or jalapeño chilies (seeds removed and finely chopped, optional)
  • 1/2 teaspoon chili powder (optional)
  • 1/2 teaspoon oregano (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. In a medium-size pot, brown onion, carrots, celery, and garlic in vegetable oil over medium heat for 10 minutes.
  2. Add hominy, chicken, and water. If using cayenne pepper, jalapeño chilies, chili powder, or oregano, add that too. Mix well.
  3. Bring pot to a boil. Lower heat and cook for about 10 minutes.
  4. Add salt and pepper. Serve hot.

Tuscan Potato Skillet

Ingredients

  • 10 petite red potatoes
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 pound chicken pieces
  • 2 tablespoons extra virgin olive (divided)
  • 1 tablespoon chopped fresh rosemary (or 1 teaspoon dried rosemary)
  • 4 cloves garlic (minced)
  • 2 1/2 cups frozen green beans (thawed, 12 oz. bag)
  • 1 lemon (zested and juiced)

Instructions

  1. Cut each potato into 4 wedges. Place in a large microwave-safe bowl and season with salt and pepper. Microwave on HIGH for 4 minutes. Stir and microwave for 4 minutes more.
  2. While potatoes are cooking, cut each chicken tenderloin into 4 equal pieces.
  3. Heat 1 tablespoon oil in a large skillet over medium-high heat. Add chicken and cook for 5 minutes or until nicely browned, stirring frequently.
  4. Add remaining oil and potatoes; cook and stir for 5 minutes more to brown potatoes and fully cook chicken.
  5. Stir in rosemary, garlic, green beans, lemon zest and juice. Cook for a few minutes more to heat through. Season to taste with salt and pepper

Notes

If you do not have red potatoes, feel free to use whatever type of potatoes that you have on hand.

This hearty Asian dish is bound to warm you up on a cold winter’s day. The flavors are more vibrant than most Western style stews. You can also easily customize this dish by adding even more of your favorite vegetables.

Chinese Beef Stew

Ingredients

  • 1 cup boiling water
  • 1/2 cup dried black mushrooms
  • 1 Lb. beef brisket, trimmed and cubed
  • 1/2 onion, chopped
  • 2 stalks of green onions, chopped
  • 1 teaspoon grated ginger
  • 2 garlic cloves, minced
  • 2 cups broth
  • 1 tablespoon of brown sugar
  • 1.5 tablespoons of soy sauce
  • 1 tablespoon sake
  • 1/2 teaspoon Sichuan pepper
  • 2 star anise
  • 1 whole clove
  • 3 dried red chilies
  • 1 cinnamon stick (5cm long)
  • 1 teaspoon sesame oil

Instructions

  1. Soak dried mushrooms in boiling water for about 30 minutes.
  2. Remove mushrooms, chop and set aside.
  3. Strain soaking liquid. Discard solids and reserve 1 cup soaking liquid.
  4. Sauté beef on all sides or until browned. Add onion, ginger, and garlic. Fry couple of minutes. Stir in reserved soaking liquid, 2 cups broth, brown sugar, soy sauce, sake, Sichuan pepper, star anise, clove, dried chilies and cinnamon stick.
  5. Cover, reduce heat, and simmer 1 hour. Stir in mushrooms.
  6. Cover and simmer 40 minutes or until beef is tender.
  7. Remove beef mixture with a slotted spoon. Discard star anise, cloves, dried chilies, and cinnamon stick.
  8. Bring remaining liquid to a boil, cook until reduced to 1 cup.
  9. Serve sprinkled with green onions and sesame oil over rice with sauce.

Stir-Fry Fajita Chicken

Ingredients

  • 1 3/4 cups Brown rice, long-grain, regular, dry
  • 1 1/2 teaspoons Salt-free chili-lime seasoning blend
  • 1/4 teaspoon Granulated Garlic
  • 1 tablespoon Fresh cilantro, chopped
  • 2 tablespoons canola oil
  • 1 cup Fresh onions, peeled, diced
  • 4 cups Cooked fajita chicken strips (16 oz)
  • 3 1/2 cups Fresh butternut squash, peeled, seeded, diced 1'2"
  • 1/2 cup Fresh red bell peppers, seeded, diced
  • 1 cup Frozen corn, thawed
  • 1/2 cup Canned diced green chilies
  • 1/2 cup Canned low-sodium diced tomatoes
  • 1/2 teaspoon ground black pepper
  • 3/4 teaspoon ground cumin
  • 1/4 teaspoon garlic powder

Instructions

  1. Combine brown rice and 4 ½ cups water in a large pot and bring to a rolling boil. Turn heat down to low. Cover and cook until water is absorbed, about 30-40 minutes. Sprinkle with ½ tsp salt-free seasoning blend, granulated garlic, and cilantro. Mix well. Keep warm. A rice cooker may be used with the same quantity of brown rice and water.
  2. Heat canola oil in a large skillet or a wok. Cook onions for 2 minutes or until translucent.
  3. Add chicken, squash, and remaining salt-free seasoning blend. Stir-fry over high heat for 10 minutes or until squash is tender.
  4. Add red peppers, corn, green chilies, tomatoes, pepper, cumin, and garlic powder. Stir-fry over medium-high heat for no longer than 2 minutes so vegetables will remain crunchy. Do not overcook. Reduce heat to low and let simmer 2 minutes.
  5. Serve hot.

Cheesy Chicken Penne

Ingredients

  • 3 cups Penne pasta, whole-wheat, dry (12 oz)
  • 1 tablespoon Granulated Garlic
  • 2 cups Fresh broccoli florets
  • 1 cup Cooked diced chicken, 1/2" pieces (4 oz)
  • 1 1/2 cups Fat-free half and half
  • 1 tablespoon Enriched all-purpose flour
  • 1/8 cup low-sodium chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 cup reduced-fat cheddar cheese, shredded (2 oz)
  • 1/2 cup Low-fat mozzarella cheese, low-moisture, part-skim, shredded (2 oz)

Instructions

  1. Preheat oven to 350 °F.
  2. In a large pot, bring 2 quarts water to a boil. Gradually stir in pasta and return to a boil. Cook uncovered for 8-10 minutes or until tender. Do not overcook. Drain well. Toss pasta with ½ teaspoon garlic.
  3. Fill a medium pot with water and bring to a boil. Add broccoli florets and cook for 5 minutes. Drain well. Sprinkle with remaining garlic.
  4. Transfer pasta and broccoli to a medium casserole dish (about 8” x 11”) coated with nonstick cooking spray. Add chicken. Mix well.
  5. In a small mixing bowl, mix ½ cup half and half with flour. Whisk to remove lumps.
  6. In a medium skillet, heat chicken broth, salt, pepper, and remaining half and half. Stir constantly. Stir in half and half/flour mixture. Stir constantly and bring to a boil.
  7. Reduce heat to low. Stir frequently for 5 minutes. Sauce will thicken. Add cheese and stir until cheese melts. Remove from heat. Pour sauce over broccoli/pasta mixture.
  8. Cover casserole dish with lid or with foil. Bake at 350 °F for 8 minutes. Heat to an internal temperature of 165 °F or higher for at least 15 seconds (use a food thermometer to check the internal temperature). Remove from oven. Serve hot.

“My mom always said that it was important to eat different-colored vegetables,
but it wasn’t until I saw a beautiful rainbow last week that I felt encouraged to
add colorful vegetables to my mother’s traditional chicken soup,” says Ahlissa.
“Adding these vegetables to soups is an easy way to try new vegetables. My
soup has 13 different vegetables in it. I challenge the nation to eat as many
different-colored vegetables as they can!”

Caribbean Rainbow Soup

Ingredients

    For the Soup:
  • 2 tablespoons vegetable oil
  • 1½ yellow onions, peeled and minced
  • 4 skinless boneless chicken breasts, chopped
  • 6 minced garlic cloves
  • 2 tablespoons chopped parsley
  • 3 bell peppers—red, orange, and
  • yellow—seeded and chopped
  • 3 carrots, peeled and chopped
  • 2 red potatoes, chopped
  • 1½ cups chopped purple cabbage
  • 1½ cups cubed pumpkin or sweet potato
  • 1 zucchini, chopped
  • 3 okras, sliced
  • 1½ cups chopped baby spinach
  • Sea salt and black pepper to taste
  • For the Wheat Dumplings:
  • 1 cup whole-wheat flour
  • 1 tablespoon olive oil
  • 1 teaspoon sea salt

Instructions

    Make the Soup:
  1. In a large stockpot, warm the oil over moderate heat. Add the onions and cook until soft, about 5 minutes.
  2. Add the chicken, garlic, parsley, peppers, and 1 cup of water and cook for 5 minutes.
  3. Add the remaining ingredients and 11 cups of water. Bring to a boil, then reduce the heat to low
  4. and simmer for 30 minutes.
  5. Meanwhile, make the Wheat Dumplings:
  6. In a large bowl, combine the whole-wheat flour, sea salt, and olive oil. Drizzle ¼ cup water in slowly and knead for 2 minutes. Shape into small balls and flatten. Add to soup during its last

“Being an Alaskan-born kid, I love salmon! I like the salmon my dad prepares,
but decided to break out and take it to the next level,” explains Michael. “So,
I decided to combine some of the ingredients from foods I enjoy to create an
original recipe. I also have a friend who is gluten-intolerant, so I made this
recipe gluten-free. I would include a mandarin orange, steamed asparagus,
and a glass of skim milk to complete the meal.”

Maple-Pecan Salmon Delight

Ingredients

    For the Salmon:
  • 1 pound wild Alaskan salmon
  • ½ lemon
  • 1 clove garlic, peeled and minced
  • 1 inch fresh ginger, peeled and grated
  • ¼ cup maple syrup
  • 1 tablespoon low-sodium soy sauce
  • ¼ cup chopped pecans
  • For the Quinoa:
  • 1 cup quinoa
  • 1 cup carrots, peeled and chopped
  • 1 cup peas

Instructions

  1. Preheat oven to 400°F. Place the salmon in a baking dish skin-side down.
  2. Squeeze the lemon juice onto the salmon. In a small bowl, mix together garlic,
  3. ginger, maple syrup, and soy sauce. Pour the mixture over the salmon. Marinate
  4. in the refrigerator for 20 minutes.
  5. While salmon is marinating, prepare the quinoa: In a small saucepan, boil 2 cups
  6. of water over high heat. Add the quinoa, carrots, and peas and reduce the heat
  7. to low, and cover. Cook for 15 minutes or until quinoa and carrots are tender.
  8. Sprinkle pecans over the salmon and bake uncovered for 15 to 20 minutes or
  9. until its golden and flaky towards the edges.

While we are still setting everything up, we thought we would take and share a recipe real quick. This is going to be a recipe site after all, and we need to make sure that they are going to display the right way. So here we go with our first recipe test.

Classic Banana Walnut Bread

Ingredients

  • 1 1/4 cups unbleached all-purpose flour, sifted
  • 1 teaspoon baking soda
  • 1/2 teaspoon fine salt
  • 2 large eggs, at room temperature
  • 1/2 teaspoon pure vanilla extract
  • 1/2 cup (1 stick) unsalted butter, at room temperature, plus more for preparing the pan
  • 1 cup sugar
  • 3 very ripe bananas, peeled and mashed with a fork (about 1 cup)
  • 1/2 cup toasted walnut pieces

Instructions

  1. Sift the flour, baking soda and salt into a medium bowl; set aside. Whisk the eggs and vanilla together in a liquid measuring cup with a spout; set aside. Lightly brush a 9-by 5- by-3-inch loaf pan with butter. Preheat the oven to 350 degrees F.
  2. In a standing mixer fitted with the paddle attachment or with an electric hand-held mixer, cream the butter and sugar until light and fluffy. Gradually pour the egg mixture into the butter while mixing until incorporated. Add the bananas (the mixture will appear to be curdled, so don't worry), and remove the bowl from the mixer.
  3. With a rubber spatula, mix in the flour mixture until just incorporated. Fold in the nuts and transfer the batter to the prepared pan. Bake for 55 minutes or until a toothpick inserted into the center of the bread comes out clean. Cool the bread in the pan on a wire rack for 5 minutes. Turn the bread out of the pan and let cool completely on the rack. Wrap in plastic wrap. The banana bread is best if served the next day.
